40/30/30 Power Bars

Ingredients

  • 2 cups light corn syrup
  • 1 tbsp honey
  • 2 cups natural peanut butter (fresh ground is best)
  • 2 tbsp cocoa powder
  • 1 tsp cinnamon
  • 1 tsp salt
  • 2 cups vegetable protein powder
  • 3 cups oats (quick or old fashioned)
  • 1 cup chocolate chips
  • 1 cup dried cranberries
  • 1 cup shredded unsweetened coconut

Instructions

  1. In a large bowl mix together corn syrup, honey, peanut butter, cocoa powder, cinnamon and salt until smooth and well combined.

  2. Add the vegetable protein powder and stir to combine. If the mixture becomes too stiff, don’t hesitate to use your hands to ensure everything is well mixed.

  3. Using a blender or food processor, blend the oats until they are finely ground. Add the ground oats to the peanut butter mixture and mix thoroughly. The dough will be stiff, so knead with your hands if necessary.

  4. Fold in the chocolate chips, dried cranberries, and shredded coconut until evenly distributed throughout the mixture.

  5. Prepare an 11.5 x 15-inch glass baking dish by coating it with butter or non-stick spray. Press the power bar mixture firmly into the pan, ensuring an even layer.

  6. Refrigerate for at least 1 hour to allow the bars to set. Once firm, pry the mixture out of the pan and cut into 30 bars (or smaller pieces if preferred).

  7. Store the bars in the refrigerator to keep them fresh longer. Grab one whenever you need a quick, healthy snack on the go!
