Slice the tomatoes and fresh mozzarella into even rounds. Salt them both lightly and lay out on a platter alternating between tomato and mozzarella slices.
In a small bowl, combine the lemon juice, olive oil, remaining salt, parsley, and garlic if using. Whisk until combined.
Drizzle the lemon parsley dressing over the tomato and mozzarella slices. Make sure each piece gets a good coating to maximize the flavor.
