Rich and refreshing chocolate ice cream with smashed junior mints.
In a medium saucepan, heat the water, salt and sugar over medium heat until it's steaming but not bubbling yet. This should take about a minute or so.
Remove the pan from heat and add the chopped chocolate, stir until completely melted. Set aside and cool to room temperature.
Pour the chocolate into the ice cream base and whisk until smooth and combined. Chill in the fridge until cold, this should take a few hours.
Pour the mixture into an ice cream maker and churn until it's the texture of soft-serve.
While the ice cream is churning, smash the junior mints between two fingers and drop into the ice cream maker one by one.
When the junior mints are mixed in, remove the ice cream to a container, freeze for at least 2 hours before serving.
