Salt and straw ice cream base

Salt & Straw Ice Cream Base

This is one of the best ice cream bases ever!

Servings 3 cups

Ingredients

  • 1/2 cup sugar
  • 2 tbsp dry milk powder
  • 1/4 tsp xanthan gum
  • 2 tbsp light corn syrup
  • 1 ⅓ cups whole milk
  • 1 ⅓ cups heavy cream

Instructions

  1. In a small bowl stir together the sugar, milk powder, and xanthan gum.

  2. Pour the corn syrup and milk into a medium pot, whisking constantly, add the sugar mixture and stir until combined and smooth. Set over medium heat and cook without simmering just until the sugar is dissolved, about 3 minutes.

  3. Remove the pot from the heat and whisk in the cream. Pour the mixture into an airtight container and refrigerate until well chilled. This is best done a day in advance. Store for up to a week in the fridge.
