Strawberry caprese on a plate, layered slices of strawberries and mozarella topped with chopped mint and balsalmic glaze.

Strawberry Mint Caprese

Servings 4 people

Ingredients

  • 1 lb large fresh strawberries
  • 1 lb fresh mozzarella
  • 1/2 cup fresh mint or basil
  • 2 tbsp olive oil
  • 2 tsp balsamic glaze or vinegar
  • 1/4 tsp salt

Instructions

  1. Wash and dry fresh strawberries. Remove stems and slice 1/4 inch slices from top to bottom.

  2. Layer sliced strawberries on a serving platter. Top with sliced mozzarella. Sprinkle with a pinch of salt.

  3. Lay mint leaves on top of each other and slice in thin strips so you end up with a pile of thin shredded mint leaves. If you're using basil tear the leaves into small pieces with your hands.

  4. Drizzle olive oil and balsamic glaze over the strawberries. Sprinkle mint or basil over the top, garnish with a sprig of mint and enjoy.
