Mushroom Caesar Salad
A delicious plant-based twist on a classic!
Ingredients
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp vegetable seasoning like Spike, or Trader Joe's Umami Mushroom power mix
- 1 tsp salt (unless the vegetable seasoning is salty)
- 1/2 tsp fresh ground pepper
- 1 lb fresh mushrooms, sliced (about 10-12 mushrooms)
- 1 head romaine lettuce
- 1 tbsp brewers yeast
- 1/4 cup parmesan, grated (for vegetarian version)
Instructions

Add the oil, vinegar and spices to the bowl and mix.

Slice the mushrooms and add to the bowl with the oil and vinegar seasoning. Stir the mushrooms in the mixture until evenly coated and set aside for 5 min stirring occasionally.

Chop the romain lettuce and add to the bowl. Stir to combine.

Add brewers yeast and toss the salad to combine and serve.
