Bacon Apple Cheddar Quiche

Quiche is so versatile and delicious it’s great for just about any meal. The balance of sweet and savory in this bacon apple cheddar quiche works just as well for brunch as it does for a dinner paired with a side salad. If you’d like to make it vegetarian just leave out the bacon, it’s just as wonderful with the apples and cheddar.

To really make this dish shine I love to use a white aged cheddar that’s a little sharp like Dubliner cheese. A salad with a tart dressing pairs nicely on the side of this quiche just as well as sautéed green beans or roasted broccoli.

Bacon Apple Cheddar Quiche

Ingredients

  • 2 apples
  • 4 eggs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 tbsp milk
  • 4 slices bacon, cooked + chopped
  • 2 cups grated cheddar cheese
  • 1 pie crust

Instructions

  1. Preheat oven to 350 degrees.

  2. Core and thinly slice apples.

  3. Crack eggs into a bowl. Add salt, pepper, milk and whisk eggs until combined.

  4. Add apples, bacon and cheese to the eggs and mix until combined.

  5. Roll out pie dough and place into pie pan. Pour the mixture into the uncooked pie crust. To make your own, try this easy pie crust recipe. Bake at 350 degrees for 40 minutes until the bacon apple cheddar quiche is puffed up and golden brown.

  6. Let cool on the counter for 10-15 minutes before serving.
