Quick & Cozy Fall Dinner: Pumpkin Ravioli with Creamy Mushroom Sauce
Fall is in the air, and what better way to embrace the season than with a cozy dinner that’s quick, easy, and packed with autumn flavors? If you’re like me, sometimes you need a no-fuss meal that still feels special. Fresh ravioli makes it easy to whip up something delicious in no time. When I saw pumpkin raviolis at the store I grabbed them and paired them with a savory mushroom sauce that perfectly captures the cozy flavors of fall.
Pumpkin Ravioli with Creamy Mushroom Sauce
A cozy dinner that’s quick, easy, and packed with autumn flavors.
Ingredients
- Fresh pumpkin ravioli ricotta or other fillings work too
- 1 cup mushrooms any type
- ½ onion diced
- 2 tbsp butter
- ½ cup heavy cream
- ¼ cup grated parmesan plus more for topping
- 2 tbsp fresh rosemary finely chopped, or parsley
- Salt and pepper to taste
- ⅓ cup Toasted hazelnuts or pecans chopped (optional, but highly recommended)
Instructions

Cook the Ravioli: Follow the package instructions to cook the ravioli, then drain and set aside.

Sauté the Mushrooms: Heat a large pan over medium heat. Add the chopped mushrooms into the dry pan and sauté for a few minutes until any liquid that comes from the mushrooms has simmered away. Then add butter and diced onion and sauté until soft. Toss in the mushrooms and cook until golden brown and tender.

Make the Sauce: Season the mushrooms with salt, pepper, and half of the finely chopped rosemary. Pour in the heavy cream and stir, letting the sauce simmer and thicken slightly. Add parmesan and stir until melted.

Combine & Serve: Toss the cooked ravioli in the sauce to coat. Serve topped with extra parmesan, chopped rosemary, and toasted hazelnuts for a little crunch.
This recipe is pretty flexible which can make life a little easier for those days you need it. It works with pretty much any ravioli you can find like, cheese and spinach, cheese or mushroom. You can also change out the sauce to use what you have on hand or add your favorite flavor combinations. It’s even great plain with just the butter, cream and parmesan.
The combination of earthy mushrooms, herbal rosemary, and crunchy hazelnuts paired with the creamy pumpkin ravioli make this dish a fall favorite. It’s ready in less than 30 minutes and perfect for a cozy weeknight dinner!
