Refreshing Rhubarb Margarita: A Perfect Blend of Tart and Sweet

If you’ve been following my rhubarb obsession this spring hopefully you’ve already tried this Rhubarb Syrup recipe. It makes a delightful Rhubarb Margarita. This cocktail adds a unique twist to the classic margarita, boasting a lovely pink hue and a tart, fresh flavor that’s perfect for warm sunny days or intimate evenings.

Depending on how I’m feeling and how much time I have I like to try out different ways of mixing and serving these margaritas. On a hot sunny day for a crowd a blended margarita definitely hits the spot. For a romantic evening or smaller intimate dinner the Sunset Margarita on a Rock version is beautifully layered in both complexity of flavor and visually. And the Lazy Margarita…sometimes a girl just needs a drink!

Rhubarb Margarita

My grandmother loved margaritas and rhubarb and I know she would have loved this drink!

Ingredients

  • 2 oz blanco tequila
  • 1/2 oz triple sec
  • 1 oz rhubarb syrup
  • 1/2 oz fresh lime juice
  • rhubarb slice or lime wedge for garnish

Instructions

Blended Margarita

  1. Add tequila, triple sec, rhubarb syrup, lime juice and 1 cup of ice to a blender. Blend until smooth and slushy. Pour into glass and garnish with a rhubarb slice or wedge of lime.

Sunset Margarita on a Rock

  1. If you have the time and patience to make a pretty neatly layered margarita, fill the glass with a large fancy ice cube. Carefully pour the ingredients in the following order: rhubarb syrup, triple sec, tequila, fresh lime juice. Garnish with a rhubarb slice or wedge of lime.

Lazy Margarita on the Rocks

  1. Add 1 cup of ice to a glass and add the tequila, triple sec, rhubarb syrup and lemon juice. Stir to combine. Garnish with a rhubarb slice or wedge of lime.
