Servings: 3.5 cups

Ingredients

  • 8 fillets anchovy fillets packed in olive oil One 2 oz can
  • 1/2 cup onion, roughly chopped
  • 4 tsp dijon mustard
  • 4 tsp Worcestershire
  • 1 cup lemon juice
  • 2 cups olive oil
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  • Add all of the ingredients to a blender and blend until smooth. The dressing should turn light in color and become fluffy and creamy.
  • Store the dressing in a jar in the fridge for up to a week. Stir or shake to recombine before serving.
  • Makes enough for about 3 large salads.
